Cucumber Cardamom Lemonade

3 large or 4 medium lemons
1 large cucumber
1/2 cup cane sugar
2 3/4 cups water, divided
1 tbsp Cardamom extract

Wash and dry the lemons and remove the peel in strips with a knife or vegetable peeler, being careful not to cut into the white pith. Transfer the peel to a small saucepan and add the sugar and 1/2 cup water. Bring to a boil, stirring occasionally to dissolve the sugar. Reduce heat and simmer for 5 minutes, then set aside.

Juice the lemons and cucumber separately, then strain to remove any pulp. If you don’t have a juicer, grate the cucumber into a sieve over a pitcher and press to extract the juice. Strain the cooled syrup into a pitcher and stir in 1/2 cup lemon juice, 3/4 cup cucumber juice, 2 1/4 cups water, and 1 tbsp Cardamom extract. Serve over ice with a shot of gin or vodka (optional, but highly encouraged). 

Yield: about 4 cups
